What is Light Berry Currant Jam?

Ingredients
|
4 cups strawberries 1L 3 cusp raspberries 750mL 2 cups blueberries 500mL 1-1/2 cups red currants 375mL 1 can frozen apple 1 juice concentrate,thawed 3/4 cup granulated sugar 175mL |

Directions
|
1. In large heavy nonaluminum pot, mash strawberries with potato masher. Add raspberries, blueberries and red currants; lightly crush. Stir in apple juice concentrate, making sure pan is no more than half full.
2. Bring to boil over medium heat; reduce heat, cover and simmer for 10 minutes. Stir in sugar and return to boil over high heat; boil vigorously, stirring almost constantly for 25 minutes or until at soft set stage.
3. (To test for setting point, drop ½ tsp/ 2mL hot mixture onto 1 chilled plate and let cool. Return to freezer for 2 minutes. Tilt plate; if mixture flows slowly, it is softly set. If it is syrupy, continue to boil, repeating test every few minutes with clean chilled plate.)
4. Remove from heat. Using metal spoon , stir and skim off foam for 5 minutes .Pour into five 1-cup (250mL) canning jars, leaving ¼-inch (5mm) headspace. Seal with prepared discs and bands. Process in boiling water bath for 10 minutes. |
