What is Black Bean and Vegetable Chili?

Ingredients
|
1 cup dried black beans, rinsed 250mL 1 tbsp vegetable oil 15mL 3 tbsp olive oil 50mL 2 cloves garlic, minced 2 2 stalks celery, sliced 2 2 large carrots, diced 2 1 cup each diced zucchini, onion, 250mL Mushrooms and sweet red or green pepper 1 can (28 oz/796mL) tomatoes 1 (untrained), chopped 1-1/2 cups water or vegetable stock 375mL ½ cup chopped fresh parsley 125mL 1 tbsp chili powder 15mL 1tsp each dried basil and oregano 5mL 1 tsp each salt and ground cumin 5mL ½ tsp pepper 2mL |

Directions

1. In pressure cooker, combine 4 cups (1L) salted water, black beans and vegetable oil. Secure lid; bring to High pressure over high heat. Reduce heat to just maintain High pressure; cook for 2 minutes. Let pressure release quickly under cold running water. Drain and rinse beans; set aside.
2. In cooker, heat olive oil over medium heat; cook garlic, celery, carrots, zucchini, onions, mushrooms and red pepper, stirring often for about 7 minutes or until softened.
3. Add black beans, tomatoes, water, parsley chili powder, basil, oregano, salt, cumin and pepper. Secure lid; bring to High pressure over high heat. Reduce heat to just maintain High pressure and cook for 20 minutes. Remove form heat; let stand until pressure is completely released, 8 to 10 minutes. |
