What is Curried Vegetables with Bulgur?

Ingredients
|
1-1/2 cups bulgur 375mL 2 tbsp vegetable oil 25mL ½ cup chopped green onion 125mL 2 cloves garlic, minced 2 2 carrots, diced 2 2 stalks celery, diced 2 1 tbsp dried coriander 15mL 1 tbsp ground cumin 10mL 1 tsp each turmeric and salt 5mL ½ tsp pepper 2mL Pinch cayenne pepper Pinch 1 can (19oz/540mL) 1 chick-peas, drained and rinsed 2 zucchini, diced 2 2 tomatoes, diced 2 1 tbsp lemon juice 15mL 2 tbsp chopped fresh mint 25mL |

Directions

1. In large bowl, cover bulgur with boiling water; let stand for 30 minutes. Drain well in sieve, pressing to extract excess water.
2. Meanwhile, in nonstick skillet, heat oil over medium- high heat; cook onions, garlic carrots and celery, stirring occasionally, for about 5 minutes or until softened.
3. Stir in coriander, cumin, turmeric, salt pepper and cayenne; cook, stirring, for 1 minutes, Stir in chick- peas, zucchini tomatoes and lemon juice; bring to boil. Reduce heat to medium; cook for about 5 minutes or until vegetables are tender- crisp.
4. Divide bulgur among 4 plates; top with vegetable mixture. Sprinkle with mint. |
