What is Warm Salad of Hearty Greens, Blood Oranges, and Pomegranate Vinaigrette?

Ingredients
|
POMEGRANITE VINAIGRETTE ½ oz / 14g arrowroot 1/3 cup / 80mL Vegetable stock ½ oz / 14g minced red onion ¼ cup / 60mL red wine vinegar ¼ cup / 60mL pomegranate juice ¼ cup / 60mL walnut oil 5oz / 140g frisee, washed and dried 5 oz / 140g radicchio, washed and dried 3-1/2 oz / 100g arugula, washed and dried 2 oz / 55g beet greens, washed and dried 2oz / 55g spinach, washed and dried 7 oz / 200g blood orange sections 1-3/4 oz / 50g slivered almonds, toasted |

Directions

1. To prepare the vinaigrette, combine the arrowroot with enough stock to form a slurry. In a small saucepan, sweat the onion in the remaining stock until translucent. Add the slurry to the stock and simmer, stirring constantly, until thickened, about 2 minutes. Stir in the vinegar and juice and whisk in the oil. Keep warm.
2. Combine all of the greens and refrigerate until needed.
3. For each portion: Toss 1-3/4 oz / 50 mixed green with 2 tbsp / 30mL warm vinaigrette and place in the center of a warm plate. Garnish with ¾ oz / 20g blood orange sections and small amount of the almonds. |
