What is Broiled Red Snapper with Lime- Cilantro Vinaigrette?

Ingredients
|
2-1/4 lb / 1 kg snapper fillets, trimmed 10fl oz / 300mL lime-cilantro vinaigrette 7 oz / 200g tomato concasse 2 red grapefruit, cut into supremes 2 yellow grapefruit, cut into supremes 1 avocado, thinly sliced |

Directions

1. Score the skin of the fillets. Place the fish, skin side down, on sizzler platter and brush with 1 fl oz / 30mL of the vinaigrette.
2. Broil the snapper, turning once during cooking, until just cooked through, 5 to 7 minutes depending upon the thickness of the fish.
3. Toss the tomatoes, grapefruit, and avocado with the remaining vinaigrette and serve 5 oz / 140g with each portion of snapper. |
